  2. 2 potatoes cut into medium.size
  3. 2 tomatoes roughly chopped
  4. 1/2 cup capsicum cut into square
  5. 1/2 cup carrot cut into medium size
  6. 1 cup cauliflower florets
  7. 2 onion cut into slices
  8. 4 green chillies
  9. 6-7 garlic cloves finely chopped
  10. 1 tbsp finely chopped ginger
  11. 1 tsp garam masala powder
  12. to taste Salt
  13. 2 bay leaves
  14. 2 black cardamom,
  15. 3 green cardamom,
  16. 1inch cinnamon
  17. 2 tsp cumin seeds,
  18. 5-6 pepper corns,
  19. 3 cloves,
  20. 1 small piece of mace
  21. as required Some coriander leaves
  22. 1 tbsp desi ghee(optional)
  23. 1/4 cup oil

Instructions to make to make Vegetable pulav

  1. First wash and soaked the rice for half hour.after soaking half hour in a wok take 4 cups of water add 1 bay leaf,1 green cardamom, 1 inch cinnamon and 1 tsp cumin seeds and add soaked rice.add 2 tsp salt.then boil rice until 80% cooked.strain the rice and wash with cold water.keep asidemeanwhile chopped the vegetables
  2. Heat a wok add oil heat it.add remaining whole spices. Saute few seconds add chopped ginger garlic saute another minute.then add onion and slit green chillies.saute until onion turns light pink.now add chopped potatoes saute and cooked for 2 minutes.
  3. Now add chopped carrot,capsicum and cauliflower florets mix well.add tomatoes,salt and garam.masala powder. Mix well. Add little water and cooked for 5 minutes on medium flame.
  4. Turn the flame low,add cooked.mix gently with vegetables add some coriander leaves and Desi ghee on top.cover and cook on simmer for 10 minutes.turn off the flame.
  5. Open the lid The veg pulaw is ready to serve
