  14. 2 tbsp Lemon juice
  15. 1/4 cup Water
  16. 3-4 Green chilli
  17. 4 tbsp Coriander leaves
  18. Ingredients for Mixed vegetable raita :
  19. 1 Carrot large (peeled, washed & grated)
  20. 1 Cucumber medium size (peeled, washed, grated & squeez out the juice)
  21. 3 Snake cucumber (tarr) (washed & chopped)
  22. 1 Tomato medium size (washed and chopped)
  23. 1 Onion chopped
  24. to taste Salt
  25. to taste Black pepper powder
  26. 5 cups Unsour Curd

Instructions to make to make Pineapple fried rice with mixed vegetable raita

  1. For Pineapple fried rice :
  2. Heat oil in a wok/kadai. Add chopped pineapple. Cook it on high for 3-4 min. Keep on stirring after intervals.
  3. Add capsicum, mix it and cook it on high for 3-4 min. Now add garlic, green chilli and onion. Mix well. Cook on high till light brown. Now add raisins and cashewnuts. Mix well. Cook on high for 3-4 min. Add salt, red chilli powder and black pepper powder. Mix well on slow flame. Add soya sauce. Mix well.
  4. Add water and again mix well on slow flame. Add boiled rice. Mix very well so that the rice gets well coated with pineapple mixture.
  5. Add lemon juice, mix well. Add coriander leaves and mix well. Transfer to a serving plate. Serve hot with raita.
  6. Method for Raita :
  7. Take a bowl. Add curd and whisk properly, so that no lumps should remain. It should be smooth. Now add in all the given ingredients and mix well.
  8. Transfer it to a serving bowl. Cover it and keep it in fridge for 1/2 hr. Serve with rice, pulav, biryani or the way you like it.
